🥒 Sautéed Zucchini with Parmesan is a quick and flavorful side dish that combines tender zucchini with a rich, cheesy finish.
🧀 This recipe is perfect for a healthy addition to any meal, offering a balance of savory flavors with simple ingredients.

  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

1 tablespoon olive oil

2 tablespoons unsalted butter, divided

1 medium yellow onion, thinly sliced (optional)

4 medium zucchini or yellow summer squash, or a mix (about 2 pounds), ends trimmed and cut into 1/2-inch-thick rounds

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon dried thyme (or substitute with fresh thyme, basil, or chives)

¼ cup freshly grated Parmesan cheese

Instructions

1-First, heat 1 tablespoon olive oil, the sliced onion (if you’re using it), and 1 tablespoon of the unsalted butter in a large nonstick skillet over medium-low heat. Cook this gently until the onions start to brown, which takes about 10-11 minutes this builds a nice base of flavor. Once that’s done, add the 4 medium zucchini slices, along with ½ teaspoon salt, ¼ teaspoon black pepper, ½ teaspoon dried thyme, and the remaining 1 tablespoon butter.

2-Next, crank the heat up tomedium and keep stirring occasionally until the zucchini is just cooked through and beginning to brown. This should take another 10-15 minutes, so be patient to avoid sogginess. Finally, sprinkle ¼ cup freshly grated Parmesan cheese over the top and serve it right away for the best taste. The total time is about 35 minutes, with 10 minutes for prep and 25 for cooking, making it perfect for a quick weeknight meal.

Notes

🧅 Onions add savory flavor and crisp well when reheating.
🧈 Use olive oil for a higher smoke point to aid browning and butter for flavor.
⏳ Cook patiently until zucchini is lightly golden but not soggy inside.
