Ingredients

– 200g baby potatoes, cubed with skins on

– 1 small onion, chopped

– Half a red pepper, chopped

– 4 small low-calorie sausages, sliced into bite-size pieces (120g total, gluten-free variety optional)

– 1 slice streaky bacon, chopped

– 60g mushrooms, finely chopped

– 120ml chicken stock (½ cup)

– 2 large eggs

– 2 spring onions (green part), chopped

– Salt and black pepper to season

– ½ teaspoon sweet paprika

– ½ teaspoon garlic powder

– 30g grated cheddar

– Low-calorie cooking spray

Instructions

1-Spray a skillet with low-calorie cooking spray to keep things light and healthy.

2-Fry the bacon and sausages until lightly browned, then set them aside for later.

3-Wipe the skillet clean, spray it again, and fry the onion until it’s softened and aromatic.

4-Add the cubed baby potatoes and fry until they’re lightly golden and fork-tender, about 10-15 minutes.

5-Stir in the sweet paprika, garlic powder, salt, and pepper for a burst of flavor.

6-Mix in the red pepper and mushrooms, frying for a few more minutes until they’re tender.

7-Gradually add the chicken stock, letting it reduce around the potatoes until they’re fully cooked.

8-Return the sausages and bacon to the skillet, stir everything together, and remove from heat.

9-Make two wells in the mixture, crack the eggs into them, and sprinkle grated cheddar on top.

10-Bake in the oven for 8-10 minutes until the eggs are done just how you like them.

11-Finish with a sprinkle of salt, pepper, and chopped spring onions before serving.
