Instructions

Stir frequently until the potatoes turn tender and browned, which takes about 15 minutes, then set them aside.

2-Next, add the 12 ounces of smoked sausage sliced into ½-inch rounds, 1 cup of diced yellow onion, and 1 red bell pepper sliced into 2-inch sticks to the skillet. Cook these until the vegetables soften and the sausage heats through, about 5 minutes.
