🎄 Delight in the rich, buttery flavor of Mom’s Russian Tea Cakes, perfect for cozy holiday baking and sharing with loved ones.
❄️ These melt-in-your-mouth cookies are easy to make and bring a festive touch to any celebration.

  • Total Time: 35 minutes
  • Yield: About 24 cookies

Ingredients

– 1 cup unsalted butter, softened

– ½ cup powdered sugar

– 1 teaspoon pure vanilla extract

– 2 ¼ cups all-purpose flour

– ¼ teaspoon salt

– ¾ cup finely chopped nuts (such as pecans, walnuts, or almonds)

– Additional powdered sugar for rolling (quantity as needed)

Instructions

1-First, preheat your oven to 375°F and line a baking sheet with parchment paper to keep things neat and non-stick. This step sets the stage for baking without any fuss.

2-Next, in a large bowl, cream together the 1 cup unsalted butter, ½ cup powdered sugar, and 1 teaspoon pure vanilla extract until the mixture is light and fluffy this usually takes a few minutes with an electric mixer.

3-Now, add the 2 ¼ cups all-purpose flour and ¼ teaspoon salt to the bowl, mixing until a soft dough forms. Don’t forget to stir in the ¾ cup finely chopped nuts at this point for that extra crunch. If the dough feels too soft, pop it in the fridge for a bit to firm up before shaping.

4-Scoop the dough into 1 tablespoon-sized balls and place them on your prepared baking sheet, spacing them about an inch apart. Bake for 7-8 minutes, just until the bottoms turn a light golden brown. Once out of the oven, let the cookies cool for a minute or two, then roll them in additional powdered sugar while they’re still warm. For an even sweeter finish, roll them again once they’re fully cooled. These cookies freeze well or can be made ahead up to four days in advance, making them ideal for busy schedules.
