– 1 whole chicken, 4 to 5 pounds (approximately 1.8 to 2.3 kg), or 4 to 5 pounds of chicken pieces such as breasts, thighs, or quarters

– 2 tablespoons olive oil (for oven preparation)

Instructions

1-Start by preparing the chicken, which means removing any giblets and patting it dry with paper towels for crispy skin.

2-Next, mix the spices: 2 teaspoons paprika, 1 1/2 teaspoons thyme, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon salt, and 1/2 teaspoon black pepper in a bowl.

3-Then, rub this mixture evenly over the chicken for great flavor.

4-For rotisserie cooking, skewer the chicken and apply the spice blend without olive oil.

5-Cook it on the rotisserie for about 1 hour until it reaches 165°F (74°C).

6-Let it rest for 10 minutes before carving.

7-For oven cooking, preheat to 425°F (220°C) and place the chicken in a roasting pan.

8-Brush on 2 tablespoons olive oil, then add the spice rub.

9-Bake uncovered for 70 to 80 minutes, basting every 15 to 20 minutes to keep the skin moist.

10-If you need to keep it warm, put it in a crockpot on low heat for up to 8 hours.
