🌮 Discover a quick and delicious way to enjoy flavorful tacos with cheesy beef and zesty diced tomatoes with green chilies.
🧀 This recipe combines rich cheese sauce and seasoned beef for a satisfying meal that’s perfect for any day of the week.

  • Total Time: 20 minutes
  • Yield: 10 tacos

Ingredients

– 1 lb ground beef (lean preferred, such as 97/3)

– 1 tablespoon taco seasoning (store-bought)

– 1 can (10 ounces) diced tomatoes and green chilies with juices

– 8 ounces processed cheese (about half a block)

– 10 nacho cheese flavored taco shells

– 2 cups chopped romaine lettuce

– 3 tablespoons sour cream

– Fresh cilantro for garnish

– Optional taco toppings (e.g., shredded cheese)

Instructions

1-First, prepare your ingredients by chopping the romaine lettuce and measuring out the taco seasoning. This sets the stage for smooth cooking.

2-Then, in a skillet over medium heat, brown the 1 lb of ground beef with 1 tablespoon of taco seasoning, breaking it into small pieces as it cooks.

3-After draining any excess fat, especially if your beef isn’t lean, move on to making the cheese sauce. In a saucepan, combine 8 ounces of processed cheese with the 10-ounce can of diced tomatoes and green chilies, including their juices. Stir until the cheese melts and the mixture is smooth, which takes about 10 minutes.

4-Now for assembly: Layer 2 cups of chopped romaine lettuce into the 10 nacho cheese flavored taco shells. Add the cooked beef, then spoon the cheese sauce over the top. Finish with 3 tablespoons of sour cream, fresh cilantro for garnish, and any optional toppings like shredded cheese. Serve right away for the best texture and flavor.

🥩 Use lean ground beef to minimize fat; drain grease if necessary.
🧀 Keep diced tomatoes’ juices when mixing with cheese for a creamier sauce.
🌮 Store beef and cheese sauce separately to prevent taco shells from becoming soggy.
