4 medium chicken breasts (about 2 lbs total)

Salt and pepper to taste

1/4 cup all-purpose flour

2 tablespoons olive oil (divided)

1 tablespoon butter

1/2 cup jarred roasted red peppers (sliced into strips)

1 1/2 cups fresh baby spinach

3 cloves garlic, minced

4 slices fresh mozzarella cheese

Instructions

1-Pat the 4 medium chicken breasts dry, then cut a horizontal slit in each one about two-thirds of the way through. Season them with salt and pepper to taste.

2-Dredge each seasoned chicken breast in the 1/4 cup all-purpose flour, shaking off any excess for that perfect crispy coat.

3-Heat 1 tablespoon of the olive oil and 1 tablespoon butter in a large oven-safe skillet over medium-high heat. Sear the chicken on both sides for 2-3 minutes until golden brown, then set aside on a plate.

4-In the same skillet, add the remaining 1 tablespoon olive oil. Toss in the 1/2 cup sliced roasted red peppers and 1 1/2 cups fresh baby spinach, sautéing until the spinach wilts, about 3-5 minutes.

5-Add the 3 cloves minced garlic and cook for another minute until fragrant, seasoning with salt and pepper to taste.

6-Transfer the pepper-spinach mix to a bowl and let it cool slightly. Now, stuff each chicken pocket with one slice of fresh mozzarella cheese and a portion of the mixture, securing with toothpicks if needed.

7-Bake at 375°F (190°C) for 20-25 minutes, or until the internal temperature hits 165°F (74°C). Finally, remove the toothpicks before serving voila, dinner’s ready!
