Instructions
1-First, preheat the oven to 400°F (204°C) and slice your baguette into ½-inch pieces.
2-Arrange the slices on a baking sheet, brush with 3 tablespoons of olive oil, and sprinkle with kosher salt and pepper on both sides.
3-Bake for 10-12 minutes until golden brown, then let them cool completely.
4-In a food processor, combine 1.5 cups ricotta cheese, 3 teaspoons extra-virgin olive oil, ½ teaspoon finely chopped fresh thyme, ¼ teaspoon kosher salt, and ¼ teaspoon freshly cracked black pepper. Whip until creamy, about 1-2 minutes.
5-Spread the whipped ricotta mixture on each cooled crostini slice.
6-Top with 3 tablespoons of roughly chopped toasted pistachios and drizzle with 2 tablespoons of honey.
