Ingredients

– 2 eggs

Instructions

1-First, preheat your oven to 350 degrees Fahrenheit and line a mini muffin tin with 12 paper cupcake liners. This sets the stage for even baking and easy removal.

2-Then, whisk 2 eggs in a small bowl and set them aside while you mix the rest.

3-In a large bowl, combine 1/2 cup melted butter, 1 cup sugar, 2 teaspoons vanilla, 1/4 cup unsweetened cocoa powder, 1/8 teaspoon salt, 1 tablespoon red food coloring, and 3/4 teaspoon vinegar until everything blends smoothly. Add the whisked eggs and stir in 3/4 cup flour until just combined, then spoon the batter into the liners, saving about 3 tablespoons for later.

4-Next, in a medium bowl, cream together 8 ounces softened cream cheese and 1/3 cup sugar. Beat in 1 egg yolk and 1/2 teaspoon vanilla on high speed for 2-3 minutes until it’s nice and smooth. Spoon this cheesecake filling over the brownie batter in the liners.

5-Drop 1/2 to 1 teaspoon of the reserved batter on top and swirl it gently with a toothpick for that marble effect. Bake for 14-16 minutes until the cheesecake is nearly set but still a bit wiggly. Let it cool in the tin for 15-20 minutes, then chill in the fridge or freezer.
