Instructions
1- Melt the unsalted butter in short intervals until it’s fully melted, then let it cool slightly.
2- In a large bowl, whisk together the melted butter, granulated sugar, and light brown sugar until well combined.
3- Add the eggs, egg yolk, and vanilla extract; mix gently to avoid adding too much air, which keeps the brownies dense.
4- Stir in the vegetable oil and cocoa powder until everything is fully mixed for that rich color and flavor.
5- In a separate small bowl, mix a few tablespoons of the batter with the red gel food coloring until smooth, then fold it back into the main batter for an even hue.
6- Using a rubber spatula or wooden spoon, fold in the flour, cornstarch, and salt until no lumps remain, being careful not to overmix.
7- Stir in the vinegar thoroughly to add that signature tang, which reacts with other ingredients for a tender crumb.
8- If you like, fold in the white chocolate chips for extra gooeyness.
9- Pour the batter into your prepared pan and smooth the top for even baking.
10- Bake for 20-25 minutes until the top is set and a toothpick comes out clean or with moist crumbs. Let the brownies cool completely before adding frosting.
11-For the Cream Cheese Frosting: Once your brownies are cool, it’s time for the frosting. Beat the room temperature butter and cream cheese until smooth. Gradually mix in the powdered sugar on low speed until it’s settled, then beat on high until light and fluffy. Add the vanilla extract and combine well, then spread it evenly over the brownies and slice into 16 pieces.
