7 tablespoons (100 g) melted unsalted butter

24 oz (680 g) cream cheese, softened (brick-style, full fat)

1 cup (200 g) granulated sugar

½ cup (120 g) sour cream

1 teaspoon vanilla extract

3 large eggs, preferably at room temperature

Instructions

1-Prepare the raspberry sauce: In a saucepan, combine 12 oz raspberries, ¼ cup granulated sugar, ¼ cup water, and 1 tablespoon lemon juice. Cook over medium heat until the berries break down and the mixture thickens, then strain and cool it completely. This step takes about 10-15 minutes and sets the stage for that beautiful marble effect.

2-Make the crust: Mix 1 ½ cups graham cracker crumbs, 2 tablespoons granulated sugar, 1 tablespoon light brown sugar, and 7 tablespoons melted unsalted butter. Press firmly into the pan and bake for 10 minutes to set it properly.

3-Create the cheesecake batter: Beat 24 oz softened cream cheese with 1 cup granulated sugar until smooth and creamy. This ensures no lumps, which is key for a professional finish.
