  • Total Time: 50-55 minutes

Ingredients

– 1/2 cup all-purpose flour

– 1/2 cup packed light or dark brown sugar

– 1 and 1/2 teaspoons ground cinnamon

– 1/4 cup unsalted butter, cold

– 2 cups all-purpose flour

– 1 teaspoon baking soda

– 1/2 teaspoon baking powder

– 1/2 teaspoon salt

– 1 and 1/2 teaspoons ground cinnamon

– 1/2 teaspoon ground nutmeg

– 1/4 teaspoon ground cloves

– 1/4 teaspoon ground ginger

– 1 cup pumpkin puree

– 1/2 cup packed light or dark brown sugar

– 1/2 cup canola or vegetable oil (or melted coconut oil)

– 1/4 cup pure maple syrup

– 1/4 cup milk (dairy or nondairy)

– 1 cup confectioners’ sugar

– 2 tablespoons pumpkin spice coffee creamer, half-and-half, or milk

– 1/4 teaspoon pure vanilla extract

Instructions

1-First, preheat your oven to 350°F (175°C) and grease and flour a 9-inch square baking pan to keep everything from sticking. This step sets the stage for even baking and easy removal later.

2-Next, in a large mixing bowl, combine the dry ingredients like flour, baking soda, cinnamon, and nutmeg, stirring them thoroughly to distribute the spices evenly.

3-In a separate bowl, whisk together the wet ingredients, including pumpkin puree, brown sugar, oil, maple syrup, and milk for a smooth mixture. For those adapting to vegan options, remember to use flax eggs and plant-based alternatives as mentioned. Gradually add the dry mix to the wet one, folding gently to avoid overmixing and keep the texture light and airy.

4-Once combined, pour the batter into your prepared pan and smooth the top with a spatula. Bake for 35-40 minutes, checking with a toothpick for doneness it should come out clean. Let it cool in the pan for about 10 minutes before transferring to a wire rack.
