Ingredients

– 2 cups all-purpose flour

– 1 ½ teaspoon cinnamon

– ¾ teaspoon ginger

– ½ teaspoon allspice

– ½ teaspoon ground cloves

– 1 teaspoon baking soda

– 1 teaspoon salt

– 1 cup unsalted butter, room temperature

– ½ cup brown sugar

– ¾ cup white sugar

– 1 large egg

– 2 teaspoons vanilla extract

– 1 cup pumpkin puree

– 2 cups chocolate chips, divided

Instructions

1-First, preheat your oven to 350 degrees F and prepare a 13×9 baking pan by spraying it with baking spray or lining it with parchment paper for easy removal.

2-In a large bowl, whisk together 2 cups all-purpose flour, 1 ½ teaspoon cinnamon, ¾ teaspoon ginger, ½ teaspoon allspice, ½ teaspoon ground cloves, 1 teaspoon baking soda, and 1 teaspoon salt until well combined.

3-In a stand mixer, cream 1 cup unsalted butter with ¾ cup white sugar and ½ cup brown sugar on medium-high speed, scraping the sides as needed to ensure everything mixes evenly.

4-Add 1 large egg, 2 teaspoons vanilla extract, and 1 cup pumpkin puree to the mixer, and blend until fully incorporated for a smooth batter.

5-Gradually mix in the dry ingredients from the bowl until just combined, being careful not to overmix, then stir in 1 ½ cups of the chocolate chips by hand.

6-Spread the batter evenly into the prepared pan and sprinkle the remaining ½ cup chocolate chips on top for an extra gooey finish.

7-Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean, then let the bars cool completely before cutting into squares for the best results.
