Ingredients

– 5 pounds Beef Prime Rib

– 1 ½ teaspoons Salt

– 2 teaspoons Black Pepper

– 2 teaspoons Fresh Rosemary

– 1 teaspoon Fresh Thyme

– 8 cloves Garlic, minced

– 1/4 cup Olive Oil

– Horseradish for serving (optional)

Instructions

1- Preheat your oven to 450°F (232°C) and pat the prime rib dry with paper towels to get a crispy crust.

2- Season the roast generously with salt, black pepper, minced garlic, fresh rosemary, and fresh thyme, pressing them into the meat for maximum flavor.

3- Drizzle the olive oil over the prime rib and rub it evenly across the surface to help the seasonings stick.

4- Place the roast on a rack in a roasting pan and insert a meat thermometer into the thickest part.

5- Roast at 450°F for 15 minutes to form a nice crust on the outside.

6- Lower the oven temperature to 325°F (163°C) and keep roasting until the thermometer hits 125°F (52°C) for medium-rare, which takes about 1-1.5 hours.

7- Take the prime rib out of the oven, cover it loosely with foil, and let it rest for 20 minutes so the juices settle.

8- Slice the meat and serve it up; add horseradish if you like, and pair with sides for a full meal.
