1 recipe meringue macaron shells dyed with fuchsia gel food coloring

1/4 cup caramelized white chocolate chips (42 grams) or white chocolate, caramel sauce, or dulce de leche as substitutes

1/4 cup cream cheese softened (56 grams)

2 tablespoons unsalted butter softened (28 grams)

1/3 cup powdered pretzels

1 cup powdered sugar (125 grams)

2 to 4 tablespoons milk (only if necessary)

20 mini pretzels

1/4 cup sprinkles

1 cup white chocolate chopped (170 grams)

100g almond flour for the shells

150g powdered sugar for the shells

3 large egg whites for the shells

50g crushed pretzels for the shells

50g granulated sugar for the shells

1 tsp vanilla extract for the shells

Instructions

1-First, preheat your oven to 150Β°C (300Β°F) and line your baking trays with parchment paper. This sets the stage for baking the macaron shells smoothly.

2-Follow the directions for melting the caramelized white chocolate: heat it in the microwave at 15-second intervals, stirring until fully melted, then let it cool for about 10 minutes.

3-Next, beat the cream cheese and butter with an electric mixer for 2 to 3 minutes until they turn fluffy. Add the melted and cooled chocolate, mixing it in well. Then, incorporate the powdered pretzels and powdered sugar on low speed, and crank it up to medium-high to beat until creamy. If the mixture is too thick, add milk one tablespoon at a time; if it’s too runny, add more powdered sugar.

4-Once your buttercream is ready, place it in a piping bag with your chosen tip, like a 6B one. Pipe the frosting onto the bottom of each macaron shell and sandwich it with another shell. For decorating, melt the white chocolate in the microwave the same way, then dip half of each pretzel in it, add sprinkles, and let them set on a lined baking sheet.

5-After dipping the macarons in melted white chocolate and adding sprinkles, top each with a dipped pretzel. Let them mature in the fridge overnight for the best taste and texture. This step-by-step approach ensures your pretzel macarons turn out just right, with that signature crunch and creaminess.
