Ingredients

Instructions

  • Preheat your oven to 350 degrees F and grease a 9-inch square baking dish.
  • Cook the carrots in boiling water until fork-tender, about 20-25 minutes.
  • Puree the cooked carrots with butter and sugar until smooth.
  • Combine the puree with flour, baking powder, salt, vanilla, cinnamon, nutmeg, and cayenne pepper.
  • Blend in eggs until well combined and smooth.
  • Transfer the mixture to the baking dish and bake for 45-50 minutes until puffy and golden.
  • Let cool slightly before serving, optionally garnished with powdered sugar.
