- 2 pounds carrots, peeled and cut into chunks
- ½ cup butter
- ½ cup granulated sugar

- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg

- Optional Garnish: powdered sugar
Instructions
- Preheat your oven to 350 degrees F and grease a 9-inch square baking dish.
- Cook the carrots in boiling water until fork-tender, about 20-25 minutes.
- Puree the cooked carrots with butter and sugar until smooth.
- Combine the puree with flour, baking powder, salt, vanilla, cinnamon, nutmeg, and cayenne pepper.
- Blend in eggs until well combined and smooth.
- Transfer the mixture to the baking dish and bake for 45-50 minutes until puffy and golden.
- Let cool slightly before serving, optionally garnished with powdered sugar.
