Instructions

1-In a small bowl, combine 1 tablespoon kosher salt (Diamond Crystal or 1/2 tablespoon Morton kosher salt), 1/2 teaspoon black pepper, 1 tablespoon garlic powder, 1 tablespoon paprika, 1 teaspoon dried sage, and 1 teaspoon dried thyme to make a flavorful rub.

2-Pat the 3 pounds boneless pork shoulder dry and place it fat side up on the wire rack for even roasting.

3-Apply the spice mixture evenly over the pork and spray the top with olive oil to help it crisp up nicely.

4-Let the roast sit at room temperature for 30 minutes so the flavors can soak in, preparing it for the oven.

5-Preheat your oven to 425°F, insert a meat thermometer into the center, and roast for 15 minutes to get a good sear.

6-Lower the temperature to 375°F and continue roasting until the internal temperature hits 145°F, which takes about 75 minutes for this size.

7-Once done, take the roast out, loosely cover it with foil, and let it rest for 20 minutes before slicing to keep the juices inside.
