Ingredients
3 large boneless, skinless chicken breasts, sliced lengthwise into thin cutlets
½ teaspoon salt
¼ teaspoon ground black pepper
6 tablespoons all-purpose flour
2 tablespoons olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
1 cup chicken stock
1 cup heavy cream
½ cup grated parmesan cheese
1 teaspoon chili flakes
¼ teaspoon oregano
¼ teaspoon thyme
⅓ cup chopped sundried tomatoes
1 tablespoon fresh basil leaves for garnish
Instructions
1-Gather all ingredients and prepare your setup by seasoning the chicken cutlets with ½ teaspoon salt and ¼ teaspoon black pepper, then dredge them in 6 tablespoons of flour, shaking off any excess.
2-In a large skillet, heat 2 tablespoons of olive oil and melt 2 tablespoons of unsalted butter over medium heat to coat the pan evenly, then brown the chicken for 4-5 minutes per side until golden and fully cooked, and transfer to a plate to rest.
3-Sauté 3 cloves of minced garlic in the same skillet until fragrant, then add 1 cup of chicken stock to deglaze the pan, scraping up the tasty browned bits.
4-Lower the heat to medium-low, stir in 1 cup of heavy cream and ½ cup of grated parmesan cheese, and let it simmer for a few minutes to blend the flavors.
5-Season the sauce with 1 teaspoon chili flakes, ¼ teaspoon oregano, ¼ teaspoon thyme, and adjust salt and pepper as needed, then mix in ⅓ cup of chopped sundried tomatoes.
6-Return the chicken to the skillet and simmer until the sauce thickens to a creamy consistency, which takes just a bit more time.
7-Finally, garnish with 1 tablespoon of fresh basil leaves and serve warm, pairing it with sides like pasta or rice for a complete meal.
