Instructions

1-Preheat your oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly. This helps the muffins bake evenly and come out clean.

2-In a large bowl: whisk together the flour, baking powder, baking soda, and sugar until well combined. This dry mix forms the base for a fluffy texture.

3-In a separate bowl: mix the eggs, light olive oil, and yogurt until fully blended. If you’re using Greek yogurt, don’t forget to add that extra tablespoon of milk or buttermilk for the right consistency.
