Instructions
1-Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
2-Finely chop pistachios by hand or pulse in a food processor, leaving some larger pieces for texture.
3-In a large bowl, combine ground pistachios, flour, powdered sugar, and salt.
4-Add softened butter and vanilla or almond extract; mix until a soft, uniform dough forms. If desired, add green food coloring for a vibrant hue.
5-Chill the dough for at least 30 minutes (or up to 24 hours) to prevent excessive spreading and maintain shape.
6-Scoop tablespoon-sized portions of dough and roll into balls, spacing about 1 to 2 inches apart on the baking sheet.
7-Bake for 12 to 15 minutes or until edges begin to lightly brown.
8-Allow cookies to cool on the baking sheet for 5 minutes before rolling generously in powdered sugar. If the coating fades, reroll before serving.
9-Cool completely on a wire rack before storing or serving.
