3 1/2 cups all-purpose flour

1 cup sweetened flaked coconut

1 cup firmly packed brown sugar

1 teaspoon baking soda

1 cup butter

1 cup sugar

3 large eggs

1 (20 oz.) can crushed pineapple

toasted flaked coconut

Instructions

1-Preheat the oven to 350°F (175°C) and lightly grease a 13 x 9 inch baking pan to prevent sticking.

2-In a large bowl, mix 2 1/2 cups of flour, sweetened flaked coconut, brown sugar, and baking soda until well combined.

3-Cut in 1/2 cup butter into the mixture until it becomes crumbly, then reserve 1 cup of this for the topping.

4-Press the remaining crumb mixture evenly into the bottom of the pan and bake for 10 minutes to form a solid base.

5-In another bowl, beat the remaining 1/2 cup butter and sugar until creamy, then add the eggs one at a time, beating well after each.

6-Gradually add the remaining 1 cup flour and stir in the well-drained crushed pineapple to create a smooth mixture.

7-Spread this pineapple mixture over the baked layer, sprinkle the reserved crumb mixture on top, and bake for another 25 minutes or until a wooden pick inserted comes out clean.

8-Once done, top with toasted flaked coconut and let the bars cool completely before cutting into 12 squares.
