1 cup (226g) unsalted butter, softened to room temperature

8 ounces (224g) full-fat cream cheese, softened to room temperature

2 cups (280g) all-purpose flour

1 ½ cups (330g) light brown sugar, packed (dark brown sugar or granulated sugar can also be used)

2 large eggs (room temperature optional)

2 tablespoons (28g) unsalted butter, melted

1 teaspoon (5g) pure vanilla extract

1 cup (120g) pecans, chopped roughly (whole or halves recommended)

Instructions

1-First, preheat your oven to 350°F and grease a mini muffin pan generously.

2-Then, for the crust, beat the softened butter and cream cheese together until they’re well combined, slowly adding the flour until a dough ball forms. This creates a buttery base that’s key to the tart’s texture.

3-Next, for the filling, mix the brown sugar, eggs, melted butter, and vanilla extract in a bowl until smooth, then gently fold in the chopped pecans. Divide the dough into 12 to 16 balls, about 1 tablespoon each, and press them into the muffin pan to form the crusts. Fill each one with a heaping teaspoon of the mixture.

4-Bake at 350°F for 15 minutes, then lower the oven to 250°F and bake for another 10 minutes without opening the door. Let the tarts cool completely before serving to keep their shape. For adaptations, substitute eggs with flax eggs for vegan options or use a gluten-free flour in the crust, and adjust baking time as needed.
