Ingredients
1 box (18 ounces) brownie mix
4 ounces softened cream cheese
1/2 cup brown sugar
1/3 cup light corn syrup
3 tablespoons butter
1 egg
1 teaspoon vanilla extract
1 and 1/2 cups pecan pieces (divided, with 1 and 1/4 cups used in the filling and the rest for topping)
2 cups semi-sweet chocolate chips
2 tablespoons vegetable oil
Instructions
1-First, prepare the brownie mix as instructed on the package and let it cool completely.
2-Next, in a saucepan, heat the brown sugar, light corn syrup, butter, egg, and vanilla extract over medium heat until it boils, stirring constantly for 1 minute.
3-Then, mix in 1 and 1/4 cups of the pecan pieces and let the filling cool completely.
4-After that, crumble the cooled brownies, removing any hard edges, and mix with the softened cream cheese until it forms a smooth batter.
5-Roll the mixture into 1.5-inch balls, flatten each one, add about 1 teaspoon of the pecan filling to the center, and seal it up.
6-Melt the chocolate chips with the vegetable oil in 30-second intervals until smooth, then coat each ball, letting the excess drip off.
7-Finally, top with the remaining chopped pecans and refrigerate until the coating sets. The whole process takes around 1 hour and 30 minutes, including cooling and chilling.
