1-Step One: Cook the Pasta First, bring a large pot of generously salted water to a boil. We’re talking ocean-level salty here this is your chance to season the pasta from the inside out! Add your pasta (bucatini is my favorite for this recipe because the sauce clings to it beautifully) and cook until al dente, or just 1 minute shy of al dente if you plan to finish it in the sauce. Before draining, make sure to reserve at least 1/2 cup of that starchy pasta water it’s liquid gold for making your sauce perfect later!
2-Step Two: Sautรฉ Your Aromatics While your pasta is cooking, heat that lovely olive oil in a large skillet over medium-low heat. Add the minced garlic, dried basil, and red pepper flakes. Cook, stirring constantly, for just 1-2 minutes until everything becomes fragrant. The timing depends on your heat preference: medium-high heat will get them bursting faster (about 8 minutes), while lower heat gives you a longer, more gentle simmer (about 20-25 minutes). Want to speed things up? Cover the skillet to help the tomatoes burst faster. You can also mash them lightly after they’ve burst if you prefer a smoother sauce. Watching those little tomatoes pop open is one of life’s simple pleasures!
4-Step Four: Combine Pasta and Sauce Once your tomatoes have burst and created a lovely sauce, transfer the drained pasta directly into the skillet. Use tongs to toss everything together well, making sure each strand gets coated in that delicious burst tomato sauce. If your mixture seems a bit dry, this is where that reserved pasta water comes in handy! Add a splash at a time until the sauce reaches your desired consistency. The starch in the water helps the sauce cling to the pasta beautifully, creating a restaurant-quality dish right at home.
5-Step Five: Add the Burrata and Basil Turn off the heat, because we’re about to make this dish extra special! Add your roughly chopped fresh basil and then tear the burrata cheese into pieces over the pasta. You can also add the whole ball if you prefer. Gently toss or stir to combine slightly don’t overmix it! You want the burrata to form distinct creamy chunks throughout the pasta rather than completely melting into the sauce. Those moments when you get a bite with a pocket of creamy burrata are pure bliss!
6-Step Six: Season and Serve Give your pasta a taste and adjust the seasoning with additional salt and pepper if needed. Now it’s time to serve and enjoy! Plate the pasta immediately while it’s warm and the burrata is still creamy. Top with grated Parmesan cheese if you’re using it, along with extra fresh basil leaves, a sprinkle of red pepper flakes, and those toasted pine nuts if you’ve prepared them. The combination of the warm pasta, burst cherry tomatoes, and creamy burrata is absolutely heavenly get ready for some serious happy faces at the dinner table!
