Ingredients

– 3 large lemons

– 1/2 cup extra virgin olive oil

– 2 garlic cloves, minced

– 1 teaspoon paprika

– 1 teaspoon dried oregano

– 1 teaspoon coriander

– 1/2 teaspoon ground cumin

– 1/2 teaspoon Aleppo pepper

– Kosher salt, to taste

– Black pepper, to taste

– 2 pounds jumbo shrimp, peeled and deveined

– 3 tablespoons finely chopped parsley

– 1-2 pounds mixed vegetables

Instructions

1-Step 1: Prepare the Lemon-Spice Marinade Zest and juice 1 lemon into a large bowl. Whisk in 1/2 cup extra virgin olive oil, 2 minced garlic cloves, 1 tsp paprika, 1 tsp dried oregano, 1 tsp coriander, 1/2 tsp ground cumin, 1/2 tsp Aleppo pepper, kosher salt, and black pepper to taste. The aromas will have everyone excited.

2-Step 2: Prep Lemons and Shrimp Cut remaining 2 lemons into wedges for serving. Pat 2 pounds jumbo shrimp dry. Jumbo size gives better texture; thawed frozen works fine. Toss shrimp in marinade; let sit briefly.

3-Step 3: Add Roasted Vegetables Chop 1-2 pounds veggies like broccoli, zucchini, or peppers. Toss with 2-3 tbsp marinade. Spread on large sheet pan for that sheet pan shrimp with lemon garlic and roasted vegetables magic.

4-Step 4: Preheat and Arrange Heat oven to 400°F (200°C), rack in middle. Arrange shrimp in single layer on pan with veggies; pour remaining sauce over. Single layer prevents steaming.

5-Step 5: Bake and Finish Bake 5-7 minutes until shrimp opaque pink. They finish cooking from residual heat. Watch closely to avoid rubberiness. Garnish with 3 tbsp chopped parsley, serve with lemon wedges.
