Instructions
1. Prepare the flavored oil by whisking together olive oil, liquid smoke, and garlic in a small bowl. Set aside.
2. For the seasoning mix, combine kosher salt, garlic powder, and black pepper in a small dish. Set aside.
3. Wash, scrub, and pat dry the potatoes. Using a sharp paring knife, cut a wedge out of the middle of each potato and replace with 1 teaspoon of butter, sprinkling with the seasoning mix. Reinsert the wedge and press gently to close.
4. Wrap each potato in its own sheet of aluminum foil. Rub with the flavored oil, ensuring some garlic adheres to the potato, and sprinkle with additional seasoning mix before tightly wrapping.
5. For oven: Bake in a preheated 350°F oven for about 60 minutes. For grill: Place on the grill away from direct coals, close the lid, and cook for 40-60 minutes depending on the temperature, rotating every 10 minutes for even cooking.
6. Check doneness by piercing with a fork; the potato should be tender.
