Ingredients
2 cups thinly sliced onions
2 tablespoons butter
1 (15 ounce) can chicken broth (or 1 3/4 cups broth)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 chicken bouillon cubes
1/4 cup processed cheese cubes, diced (compressed in measuring cup)
1 1/2 to 1 3/4 cups white sauce
shredded cheddar cheese for garnish
3 tablespoons butter for white sauce
3 tablespoons all-purpose flour for white sauce
1/4 teaspoon salt for white sauce
1 1/2 cups whole milk for white sauce
Instructions
1-In a 1-quart saucepan, melt 3 tablespoons butter. Add 3 tablespoons flour and cook on medium heat, stirring constantly, until the mixture thickens and pulls away from the pan sides.
2-Slowly pour in 1 1/2 cups whole milk while stirring constantly; add 1/4 teaspoon salt. Continue stirring until the sauce thickens to a pudding consistency. Remove from heat and set aside.
3-In a 2-quart saucepan, melt 2 tablespoons butter. Add 2 cups thinly sliced onions. Cook on low to medium heat, stirring frequently, until onions are soft and clear but not browned.
4-Add 1 (15 ounce) can chicken broth, 2 chicken bouillon cubes, 1/4 teaspoon salt, and 1/4 teaspoon ground black pepper to the onions. Stir until heated through.
5-Stir in the prepared white sauce and 1/4 cup diced processed cheese cubes. Simmer on medium-low heat, stirring constantly, until the cheese is melted and all ingredients are well blended.
6-Reduce heat to warm and cook the soup for another 30 to 45 minutes. Ladle soup into bowls and garnish with shredded cheddar cheese. Serve with slices of warm dark bread.
