Ingredients

– 2 teaspoons olive oil

– 4 skinless salmon fillets (6 ounces each, about 1 inch thick)

– 2 cloves garlic, minced

– 2 1/2 teaspoons fresh rosemary, chopped

– 5 tablespoons chicken broth, divided

– 1 1/2 teaspoons orange zest

– 2/3 cup fresh orange juice

– 1 tablespoon lemon juice

– 1 1/2 tablespoons honey

– 2 1/2 teaspoons cornstarch

– Salt and pepper to taste

Instructions

1-Heat 2 teaspoons olive oil in a large non-stick skillet over medium-high heat.

2-Season 4 skinless salmon fillets with salt and pepper on both sides.

3-Add salmon to the pan and cook until browned on both sides and cooked through, about 3 to 4 minutes per side. Transfer salmon to a plate, leaving oil in the pan.

4-Add 2 cloves minced garlic and 2 1/2 teaspoons chopped fresh rosemary to the pan and sautΓ© for 20 seconds.

5-Add 1/4 cup chicken broth and simmer until mostly reduced.

6-Stir in 1 1/2 teaspoons orange zest, 2/3 cup fresh orange juice, 1 tablespoon lemon juice, and 1 1/2 tablespoons honey.

7-In a small bowl, whisk together the remaining 1 tablespoon chicken broth with 2 1/2 teaspoons cornstarch.

8-Pour the cornstarch mixture into the pan, season the sauce with salt and pepper to taste, bring to a boil, and allow to boil for 1 minute while stirring constantly.

9-Return salmon to the pan and spoon sauce over the fillets before serving.
