  • Total Time: 50 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

1 Tbsp breasts, cut into bite-size pieces

2 Tbsp butter

2 Tbsp all-purpose flour (or a gluten-free alternative)

1 medium yellow or white onion, chopped

4 green onions, chopped

4 cloves garlic, finely minced

3 ribs celery, chopped

1 green bell pepper, chopped

1 1/2 tsp dried basil

1 1/2 tsp Cajun seasoning (ā‰ˆ 600 ml) chicken broth

1 1/4 cup (ā‰ˆ 250 g) long-grain rice

Instructions

1-Prepare all ingredients by dicing chicken, slicing sausage, and chopping vegetables.

2-Heat oil in a large pot over medium heat, add onion, bell pepper, and garlic, and sautƩ until translucent.

3-Add chicken and sausage, cooking until browned to develop rich flavors.

4-Stir in rice, dried basil, Cajun seasoning, salt, black pepper, and cayenne pepper if desired.

5-Pour in chicken broth and diced tomatoes, bring to a boil, then reduce heat and cover.

6-Simmer for 20-25 minutes until rice is fully cooked and liquid is absorbed.

Notes

šŸ”„ Keep the heat at a gentle simmer after adding the rice; a rapid boil can cause the rice to become mushy.
šŸ§‚ Use low‑sodium chicken broth and taste before adding extra salt, as the sausage already contributes a lot of sodium.
ā±ļø For added depth, make a quick roux with the butter and flour the day before; it will help thicken the sauce and develop richer flavor.
