– 15 ml cream of coconut

– 12 24 g granulated sugar or honey to taste

– 2.5 ml pure vanilla extract

– 1.25 ml blue food coloring or natural spirulina powder

– 240 ml ice cubes

Instructions

1-Start by measuring out 240 ml frozen pineapple chunks, 120 ml full-fat canned coconut milk, 120 ml whole milk or plant-based alternative, 15 ml cream of coconut, 12 24 g granulated sugar or honey, 2.5 ml pure vanilla extract, 1.25 ml blue food coloring or spirulina powder, and 240 ml ice cubes.

2-Add all the ingredients to a high-speed blender in the order listed for even mixing.

3-Blend on high speed until the mixture is smooth, gradually adding the blue food coloring or spirulina to reach your desired pastel blue shade, which takes about a minute.

4-Once blended, divide the mixture into two tall glasses for serving.

5-Top with whipped cream and blue sugar crystals or shredded coconut, then serve immediately with a straw for the best texture and flavor.
