Ingredients
– 2 cups rolled oats
– ½ cup granulated sugar or cane sugar
– 1 ½ teaspoons baking powder
– ½ teaspoon cinnamon
– ½ teaspoon salt
– 2 large eggs
– ½ cup almond milk
– ¼ cup applesauce
– 1 teaspoon vanilla extract
– ¼ cup finely chopped walnuts
– ¼ cup dried cranberries
Instructions
1-Preheat oven to 350°F (175°C). Line an 8-inch square pan with parchment paper, allowing the paper to hang over the edges for easy removal.
2-In a medium bowl, whisk together rolled oats, sugar, baking powder, salt, and cinnamon.
3-In a separate large bowl, whisk eggs, milk, applesauce, and vanilla extract.
4-Combine dry ingredients into the wet ingredients and stir until well mixed.
5-Let the mixture sit for 20 minutes to allow the oats to absorb moisture and the flavors to meld.
6-Fold in the walnuts and dried cranberries.
7-Spread the mixture evenly into the prepared pan.
8-Bake for 25-30 minutes or until the bars are golden brown and firm to the touch.
9-Allow to cool on a wire rack for 5 minutes before slicing into 16 bars.

⏳ Letting the batter rest before baking improves moisture absorption and holds the bars together.
📄 Use parchment paper that extends beyond pan edges to make lifting and slicing easier.
❄️ These bars freeze well when sliced and stored in freezer bags; thaw in the fridge overnight for best results.
