🌶️ Smoky, fiery peri peri sauce bursting with fresh chilies, garlic, and lemon – perfect tangy heat for grilling or dipping!
🍋 Super easy homemade version ready in 15 minutes, healthier and more flavorful than store-bought!

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

– 1 long red chili pepper or 6 bird’s eye chili peppers

– 1 large red bell pepper, seeded and roughly chopped (9oz/250g)

– 2 tablespoons lemon juice

– 1½ tablespoons smoked paprika

– ½ teaspoon salt

– 1 tablespoon dried oregano

– 4 large cloves garlic, crushed

– 1½ tablespoons balsamic vinegar

– 1½ tablespoons white or red wine vinegar

– ½ teaspoon ground black pepper

– 3 tablespoons extra virgin olive oil

– 1 cup full fat coconut milk (240 ml)

Instructions

1-First Step: Gather and Prepare Your Ingredients Start by assembling all your ingredients on the counter. Wash the red chili peppers and red bell pepper thoroughly. Remove the stems and seeds from the bell pepper, then chop it into rough chunks that will fit easily in your blender. For the chili peppers, keep the seeds if you prefer a spicier sauce, or remove them for milder heat. Peel and crush the garlic cloves, and measure out all your spices and liquids. Having everything prepped and measured before you start will make the blending process seamless and efficient. This mise en place approach ensures you do not forget any ingredients and helps the cooking process go smoothly.

2-Second Step: Blend the Base Ingredients Place all ingredients except the olive oil and coconut milk into your blender or food processor. This includes the chili peppers, red bell pepper, lemon juice, smoked paprika, salt, dried oregano, garlic, balsamic vinegar, white or red wine vinegar, and black pepper. Process on high speed until the mixture is as smooth as possible. Depending on the power of your blender, this may take 1-2 minutes. You want a uniform consistency without large chunks of pepper or garlic. If you find the mixture too thick to blend smoothly, you can add a tablespoon of water to help it along, but be careful not to add too much as this will affect the final consistency of your Nandos Peri Peri sauce.

3-Third Step: Emulsify with Olive Oil With the motor running on low speed, slowly drizzle in the olive oil one tablespoon at a time. This gradual incorporation helps create an emulsion, which will thicken the sauce slightly and give it a beautiful orange hue. Watch as the sauce transforms in color and texture as the oil integrates. This step is crucial for achieving that restaurant-quality consistency that coats food perfectly when used as a marinade. If you plan to use the sauce strictly as a marinade rather than a table sauce, you can stop here, as the sauce has reached the right consistency for marinating meats and vegetables.

4-Fourth Step: Add Coconut Milk and Blend For a finished sauce perfect for dipping and drizzling, add the full-fat coconut milk to the blender. Blend on medium-high speed until completely incorporated and smooth. The coconut milk adds a velvety texture and slight sweetness that balances the intense spiciness of the chilies. It also helps mellow the heat while maintaining the vibrant flavor profile. Make sure to blend long enough to fully integrate the coconut milk with the other ingredients, creating a homogeneous mixture. At this point, you should taste the sauce and adjust the seasonings if needed, keeping in mind that the flavors will concentrate slightly during cooking.

5-Final Step: Cook to Perfection Transfer the blended sauce to a pot or saucepan. Heat over medium-high heat until the sauce begins to bubble, then reduce the heat to medium. Let the sauce simmer gently for about ten minutes, or until it reaches your preferred consistency. As it cooks, you will notice the sauce thickening and the flavors melding together. Stir occasionally to prevent sticking. The cooking time can be adjusted based on how thick you like your peri peri sauce. For a thinner consistency, reduce the cooking time, or for a thicker sauce, continue simmering until desired thickness is achieved. Once cooked, remove from heat and let it cool slightly before serving. The sauce will continue to thicken as it cools. Store in an airtight container in the refrigerator once completely cooled.
