¼ cup olive oil for greasing the baking dish

32 ounces (about 900 grams) baby Bella or crimini mushrooms

1 cup chopped onions

2 teaspoons kosher salt (or 1 teaspoon if using a different brand of kosher salt)

1 tablespoon fresh garlic, minced

½ teaspoon black pepper

½ teaspoon dried thyme

1 cup shredded Gruyere cheese (alternatives include sharp cheddar, Gouda, or provolone)

1 teaspoon dried parsley for garnish

Instructions

1-Preheat the oven to 400°F (200°C) and lightly grease a 2-quart (about 1.9 liters) baking dish with olive oil.

2-Heat ¼ cup olive oil in a large deep skillet over medium-high heat. Add the sliced mushrooms, chopped onions, and kosher salt. Cook while stirring occasionally for about 10 minutes until the mushrooms release their liquid and most of it evaporates.

3-Stir in the minced garlic, black pepper, and dried thyme, cooking for an additional minute before removing from heat.

4-Transfer the mushroom mixture to the prepared baking dish and evenly sprinkle the shredded cheese on top.

5-Bake in the preheated oven for approximately 15 minutes, until the casserole is hot and bubbly. Garnish with dried parsley before serving.
