1 pound (approximately 454 grams) of 80% lean ground beef (or a half beef and half ground pork mixture)

1 large beaten egg

¼ cup (about 30 grams) of breadcrumbs

¼ cup (approximately 25 grams) grated parmesan cheese

2 teaspoons minced garlic

¼ cup (about 40 grams) finely chopped onion

¾ teaspoon kosher salt

¼ teaspoon ground black pepper

4 to 6 ounces (115 to 170 grams) of mozzarella cut into twenty-four half-inch cubes

2 tablespoons chopped fresh Italian flat leaf parsley

Instructions

1-Start by preheating your oven to 400°F (204°C) and lining a baking sheet with foil, then spray it with nonstick spray to prevent sticking. In a large bowl, gently mix the ground beef, beaten egg, breadcrumbs, parmesan cheese, minced garlic, chopped onion, salt, pepper, and parsley until just combined. If the mixture feels dry, add 1 to 2 tablespoons (15 to 30 ml) of water to moisten it.

2-Next, use a cookie scoop or spoon to portion the mixture onto the baking sheet. Place a mozzarella cube in the center of each portion, then carefully wrap the meat around the cheese to form 1 ½-inch (about 4 cm) meatballs. Make sure to seal the cheese well to avoid leaks during baking.

3-Bake the meatballs uncovered for 17 to 20 minutes, turning them halfway through for even browning. Once done, no pink should remain inside. For serving, simmer the meatballs in marinara sauce for 10 minutes, then place them over cooked spaghetti noodles for a complete meal.
