Instructions
1-Preheat the oven to 400 degrees Fahrenheit.
2-Place a mini muffin pan in the oven to heat for 10 minutes while preparing the batter.
3-In a blender, combine the 6 large eggs, 1 cup milk, and ½ teaspoon vanilla extract. Blend on low speed until smooth, about 10 to 20 seconds.
4-Add the 1 cup (5 oz) all-purpose flour and ¼ teaspoon salt to the blender and blend until just combined.
5-Remove the hot muffin pan from the oven and spray each cup thoroughly with cooking spray.
6-Pour the batter into each cup until about halfway full.
7-Bake immediately for 8 to 10 minutes, or until lightly browned.
8-Remove the pancakes from the pan while warm and place them on a clean kitchen towel; keep covered until serving.
