Ingredients

– 3/4 cup butter, melted and cooled slightly

– 3/4 cup cocoa powder

– 1 1/2 cups sugar

– 1/2 tsp salt

– 3 eggs

– 1 Tbsp vanilla extract

– 3/4 cup all-purpose flour

– Fresh fruit, diced small, for topping

– 6 Tbsp cream cheese, softened

– 6 Tbsp butter, softened

– 1 cup powdered sugar

– 1/2 tsp vanilla extract

Instructions

1-Prepping and Baking the Brownie Base: First, preheat the oven to 350 degrees F. Butter a 13 by 9-inch baking dish and line it with parchment paper or aluminum foil, leaving an overhang on two sides, then butter the lining and set aside. In a mixing bowl, stir the melted butter and cocoa powder until blended, then mix in the sugar and salt.

2-Prepping and Baking the Brownie Base: Next, blend in the eggs one at a time using a wooden spoon, followed by the vanilla extract. Add the flour and mix until no flour streaks remain, then pour the batter into the prepared baking dish. Bake for 18 to 20 minutes, or until a toothpick inserted comes out with a few moist crumbs.

3-Cooling and Assembling: After baking, cool the brownies completely on a wire rack. Lift the brownies from the pan using the parchment paper overhang and use a 2 1/2-inch round cookie cutter to cut them into rounds. For the frosting, in an electric stand mixer fitted with a paddle attachment, whip the cream cheese and butter until smooth and fluffy, then mix in the vanilla extract and powdered sugar until smooth.

4-Cooling and Assembling: Once the rounds are ready, frost each one by piping or spreading the cream cheese frosting on top. Finally, add diced fresh fruit for topping, and for bananas, toss them in a light lemon water mixture to prevent browning. Serve soon after assembling to enjoy the best texture and flavor.
