Ingredients
5 pounds russet potatoes
1 cup (2 sticks) salted butter
32 ounces (about 946 ml) chicken broth
8 ounces (about 227 grams) cream cheese
ΒΌ cup (60 ml) milk for creaminess
Salt and pepper to taste
Instructions
1-Place the cut potatoes in the bottom of a 6-quart crock pot.
2-Dot potatoes with half of the cubed butter, then season with salt and pepper.
3-Pour chicken broth over the potatoes.
4-Cover and cook on high for 4-5 hours until potatoes are fork tender.
5-Carefully drain excess broth, reserving it if desired for making gravy.
6-Return potatoes to the crock pot.
7-Add the remaining butter, cream cheese, milk, salt, and pepper.
8-Mash the potatoes by hand using a potato masher until smooth or slightly lumpy, adjusting milk for desired consistency.
9-Keep warm in the crock pot until ready to serve.
10-Optionally, top with shredded cheddar cheese, cooked bacon, and sliced green onions for loaded mashed potatoes.
