1-Preheat oven: Set your oven to 225°F (105°C). Line one or two baking sheets with parchment paper to prevent sticking.
2-Prepare egg whites: Carefully separate egg whites into a clean, dry, grease-free bowl, avoiding any yolk contamination.
3-Start whipping: Add cream of tartar and salt to egg whites. Beat on low speed until foamy, then increase to high speed.
4-Add sugar gradually: Add granulated sugar one tablespoon at a time, ensuring it dissolves fully. Continue beating until the mixture is glossy, thick, and holds stiff peaks.
5-Mix in flavorings: Stir in vanilla extract and, if desired, food coloring or gentle flavor extracts. Fold in chocolate chips gently if using.
6-Pipe cookies: Transfer meringue mixture to a piping bag fitted with a large tip. Pipe small mounds or shapes onto the parchment-lined sheets, spacing about 1 inch apart.
7-Bake: Place baking sheets in the center of the oven and bake at 225°F (105°C) for about 1 hour. For chocolate chip meringues, bake for 30 minutes.
8-Dry and cool: Turn off the oven and leave meringues inside with the door closed for 1 to 2 hours to dry completely. For chocolate chip versions, cool in the oven 30 minutes, then at room temperature.
9-Store: Once cooled, remove cookies carefully and store in an airtight container away from heat and moisture.
