5 ounces chopped bittersweet or semisweet chocolate
1 tablespoon brewed coffee (optional)
2 1/4 cups all-purpose flour
1/4 cup cornflour (optional)
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 to 3/4 teaspoon salt (omit if using salted butter)
3/4 cup unsalted butter, room temperature
1/2 cup unsalted butter or 1/2 cup vegetable oil
1 1/4 to 1 2/3 cups granulated white sugar
3 to 4 large eggs, room temperature
1 to 1 1/4 teaspoons pure vanilla extract
1 tablespoon white vinegar (optional)
1/3 cup sour cream or plain yogurt, room temperature
1/2 to 1 1/2 cups buttermilk or milk, room temperature

Chocolate Mixture:
5 ounces chopped bittersweet or semisweet chocolate, melted and cooled
1 teaspoon instant coffee powder (optional)
1 tablespoon vegetable oil or butter
1/3 cup unsweetened cocoa powder (if used instead of chopped chocolate)

Instructions

1. Preheat oven to 350°F (180°C), or 320°F (160°C) with fan on. Grease a 10-inch bundt pan or two 8-inch round cake pans.
2. Melt chopped chocolate with coffee and oil in a heatproof bowl; cool.
3. Sift or whisk flour, cornflour, baking powder, baking soda, and salt together.
4. Beat butter and oil until creamy. Gradually add sugar and beat until fluffy.
5. Add eggs one at a time, then vanilla and sour cream. Beat well.
6. Alternate adding flour mixture and buttermilk in three parts. Mix gently.
7. Divide and stir chocolate into half the batter. Swirl batters in pans.
8. Bake 30-40 minutes until a toothpick is clean. Cool in pans 15-20 minutes.
9. Transfer to wire racks to cool completely before frosting.
