Instructions
1-Prepare your ingredients and tools: Gather a piping bag with a large round tip and line baking sheets with parchment paper or silicone mats. Wipe all tools with vinegar to remove any grease that could affect the meringue.
2-Sift and mix dry ingredients: Sift 105 grams of powdered sugar and 105 grams of sunflower seed flour together, then weigh the sunflower seed flour after sifting and set aside any coarse bits.
3-Make the Swiss meringue: Whisk 100 grams of white granulated sugar and 4 grams of egg white powder (if using) with 100 grams of egg whites. Heat over simmering water until the sugar dissolves, then transfer to a mixer and whip until stiff peaks form.
4-Fold in the dry mixture: Gently fold the sifted ingredients into the meringue, adding food coloring if you want. Keep folding until the batter drips in chunks off the spatula use the teaspoon test to check it’s ready.
5-Pipe and prepare for baking: Transfer the batter to your piping bag, pipe rounds onto the trays, and tap to release air bubbles. Use a toothpick for any stubborn bubbles, then rest for 20 to 40 minutes for taller feet or bake right away.
6-Bake the macarons: Preheat your oven to 275ºF to 305ºF based on your oven type. Bake one tray at a time for 15 to 20 minutes, rotating if needed, until the shells have feet and firm tops.
7-Cool and fill: Let the shells cool completely, then pair them and fill with options like ganache or buttercream.
