– 1/2 cup granulated sugar for coating

– 1/2 cup lemon curd for filling

– 1 cup confectioners’ sugar

– 2 tablespoons fresh lemon juice

Instructions

1-Begin by whisking together the dry ingredients in a bowl.

2-In another bowl, beat the butter and sugar until creamy, then add the wet ingredients like lemon zest, juice, egg, and vanilla, mixing until combined.

3-Gradually incorporate the dry mix into the wet, then refrigerate the dough for at least 3 hours.

4-Once chilled, shape the dough into balls, coat them in sugar, and place them on parchment-lined baking sheets.

5-Press an indentation into each ball and fill with lemon curd.

6-Bake at 350°F for 12-13 minutes, and after cooling, add a simple icing drizzle for extra zing.
