Ingredients

– 1 and 3/4 cups (210g) graham cracker crumbs (about 14 full-sheet graham crackers)

– 5 tablespoons (71g) unsalted butter, melted

– 1/4 cup (50g) granulated sugar

– 1 and 1/4 cups (250g) granulated sugar

– 1 tablespoon packed lemon zest (about 1 lemon)

– 32 ounces (904g) full-fat brick cream cheese, softened to room temperature

– 1/2 cup (120ml) fresh lemon juice (about 3 to 4 lemons), at room temperature

– 1/3 cup (80g) sour cream or plain yogurt, at room temperature

– 1 teaspoon pure vanilla extract

– 3 large eggs, at room temperature

– 3/4 cup lemon curd (highly recommended)

– Whipped cream

– Lemon slices and/or fresh berries

Instructions

1-Preheat oven to 350°F (177°C) and adjust rack to the lower-middle position.

2-Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom and slightly up sides of an un-greased 9-inch springform pan. Prebake 10 minutes. Wrap the pan in foil for a water bath.

3-Infuse lemon flavor: Pulse the lemon zest with sugar to help the flavor bloom. This step makes the lemon taste stronger.

4-Mix the cheesecake filling: Beat cream cheese and lemon sugar until smooth. Add lemon juice, sour cream or yogurt, and vanilla, then beat just until combined.

5-Add eggs gently: Add eggs one at a time, mixing just until blended. Overmixing adds too much air and can increase cracks.

6-Assemble: Pour batter over the warm crust and smooth the top.

7-Water bath bake: Place in a roasting pan with 1 inch boiling water. Bake 55 to 70 minutes until edges set but the center is still wobbly.

8-Cool slowly: Turn off oven, crack the door, and cool in the water bath for 1 hour.

9-Finish cooling: Remove from water bath and cool to room temperature uncovered.

10-Add topping: Spread 3/4 cup cooled lemon curd on top.

11-Chill: Refrigerate 4+ hours, or overnight, for the best set.

12-Garnish and serve: Top with whipped cream, lemon slices, and/or fresh berries.

13-Store: Refrigerate and enjoy within up to 5 days.
