1 cup heavy whipping cream, divided

67 kiwis, divided (4 peeled and pureed, 23 sliced for garnish)
Β½ cup water
Β½ cup sugar
1 teaspoon agar agar powder
Optional: 2 drops green food coloring

Instructions

1. Preheat oven to 350Β°F (180Β°C). Combine graham cracker crumbs with melted butter until it holds shape. Press mixture into a 10-inch springform pan.
2. Bake for about 12 minutes. Remove and let cool.
3. For the filling, combine ΒΌ cup heavy cream with gelatin in a small bowl; let sit for 5 minutes. Microwave for 30 seconds, then let cool.
4. Whip the remaining heavy cream until stiff peaks form. Beat cream cheese and sugar until smooth.
5. Fold cream cheese mixture into whipped cream, add vanilla, and beat until smooth and airy. Mix in the cooled cream and gelatin thoroughly.
6. Spread evenly over the crust; refrigerate for at least 8 hours or overnight.
7. For the topping, puree 4 peeled kiwis. In a saucepan, combine kiwi puree, Β½ cup water, sugar, agar agar powder, and food coloring if using.
8. Heat and simmer until sugar and agar dissolve. Cool slightly, stir, then pour over the chilled cheesecake. Chill for at least 30 minutes.
9. Decorate with kiwi slices before serving.
