– 8-10 egg roll wrappers
– 8 oz corned beef or pastrami sliced into bite-sized pieces
– 1 cup sauerkraut
– 1 cup shredded Swiss cheese (Provolone or Mozzarella can be substituted)
– Thousand Island or Russian dressing for dipping
– Non-stick spray
– Optional: Caraway seeds
Instructions
1-Lay an egg roll wrapper flat and place the corned beef on it.
2-Top with sauerkraut, then add the shredded Swiss cheese.
3-Fold the bottom corner over the filling, then fold in the left and right sides, and roll towards the opposite corner to seal.
4-Moisten the edges with a little cold water to keep them sealed.
5-For air frying: Spray the air fryer basket and egg rolls with non-stick spray, then cook at 370°F (188°C) for 10 minutes, flipping halfway through for extra crispness.
6-For baking: Preheat the oven to 400°F (200°C), place the sprayed egg rolls on a sprayed baking sheet or parchment paper, and bake for 15 minutes.
7-For deep frying: Heat about 2 inches of canola or vegetable oil to 375°F (190°C) and fry the egg rolls for 3-4 minutes until golden brown.
8-Serve the egg rolls sliced in half with Thousand Island or Russian dressing for dipping.
