Instructions
1-First, prepare your shrimp by peeling and deveining 1 pound of medium shrimp, then coat them in 2 tablespoons of cornstarch for a nice crispiness. Heat 1 1/2 tablespoons of peanut or canola oil in a pan over high heat and cook the shrimp until they’re no longer translucent, which takes about 2-3 minutes set them aside once done.
2-Next, in the remaining oil, stir-fry 2 cups of chopped fresh green beans for 2-3 minutes until they brighten up. Add 2 green onions sliced into 1-inch pieces and cook for another minute to blend the flavors. Return the shrimp to the pan, pour in the sauce made from whisking together 1 1/2 tablespoons chili paste, 2 teaspoons soy sauce, 1 teaspoon rice vinegar, 1/2 teaspoon oyster sauce, 1 teaspoon honey, 1/2 cup chicken stock, and 2 large minced garlic cloves.
3-Stir everything together and cook for 2 more minutes until the sauce thickens and coats the ingredients evenly. Finally, garnish with sesame seeds and serve right away over rice or rice noodles for a complete meal.
