Ingredients

1 cup fine ground cornmeal (yellow or white)
1/2 teaspoon kosher salt
1/2 cup plus 2-4 tablespoons boiling water
2 tablespoons unsalted butter, melted
4 tablespoons unsalted butter at room temperature
1 teaspoon powdered sugar
1 teaspoon honey
1 pinch of salt
2 teaspoons granulated sugar (optional)
1 quart vegetable oil for frying

Instructions

1. In a medium bowl, whisk together 1 cup fine ground cornmeal and 1/2 teaspoon kosher salt.
2. Heat water in a kettle until boiling, then stir in just enough boiling water (starting with 1/2 cup plus 2-4 tablespoons) to form a soft dough that can hold its shape, adding more water gradually if needed.
3. Stir in 2 tablespoons melted unsalted butter and let the dough rest for 5-10 minutes.
4. Add about 1/4 to 1/2 inch of vegetable oil to a cast-iron or heavy-bottomed skillet and heat it to around 350-375 degrees Fahrenheit.
5. Shape the cornmeal mixture into patties using about 1/4 cup of batter per patty.
6. Carefully place the patties into the hot oil and fry for 2-5 minutes until the underside is golden brown.
7. Flip and fry the other side for another 3-4 minutes.
8. Remove from the oil using a slotted spoon and drain on paper towels or a wire rack.
9. For honey butter, combine 4 tablespoons unsalted butter at room temperature, 1 teaspoon powdered sugar, 1 teaspoon honey, and a pinch of salt until creamy, then serve with the patties.
