3 eggs, beaten

Instructions

1-Preheat your oven: Start by preheating your oven to 375º F and greasing a mini muffin pan to avoid any sticking issues. This recipe yields about 24 poppers, perfect for sharing or snacking.

2-Whisk together the dry ingredients in a bowl: 1/2 cup granulated sugar, 1/2 teaspoon kosher salt, 2/3 cup cornmeal, 1/3 cup all-purpose flour plus 2 tablespoons, and 2 teaspoons baking powder. Set that aside for now. In another bowl, mix 3 beaten eggs, 3/4 cup creamed corn, and 1 stick of melted butter until well combined. Pour this wet mixture over the dry ingredients and stir gently until just mixed no lumps left, but don’t overdo it.

3-Fill and bake: Next, use a small ice cream scoop to fill each mini muffin cup partially with the batter. Bake for 16 to 18 minutes until they’re golden.

4-Prepare the glaze and finish: While they bake, whip up the glaze by combining 1 stick of melted butter with 1/4 cup honey, and add a pinch of salt if your butter is unsalted. Once out of the oven, let the poppers cool on a wire rack and brush them with that sweet glaze for the finishing touch.
