1.5 to 2 pounds flank steak or pounded skirt steak
3 tablespoons homemade taco seasoning or spice rub
Juice of 1 citrus (such as orange or lime)
Olive oil for grilling
1 bunch cilantro (approximately 1 cup packed)
1 bunch Italian parsley (approximately 1 cup packed)
1/4 cup fresh lime juice
1/2 cup olive oil
1/4 cup chopped onion
2 garlic cloves
2 teaspoons ground cumin
2 teaspoons ground coriander
3/4 teaspoon kosher salt
1/2 jalapeño pepper
3 ripe avocados, diced
1/2 red onion, finely diced
1 large or 2 small jalapeños, seeded and diced
12 roma tomatoes, diced
2 cloves garlic, minced
Juice of 12 limes
Cilantro, to taste
Corn tortillas
Quick pickles
Optional: red onion, avocado slices, crumbled queso fresco or cotija cheese, lime wedges, chipotle mayo, hot sauce, sour cream

Instructions

1. Mix the citrus juice and taco seasoning to create a marinade. Coat the steak thoroughly and marinate at room temperature for at least 30 minutes or overnight in the fridge. Bring the steak to room temperature before grilling.
2. Preheat the grill to medium-high heat. Grease the grates with olive oil.
3. Grill the steak for 5-7 minutes on each side for medium-rare doneness. Cover with foil and let it rest for 10 minutes before slicing against the grain.
4. For the chimichurri sauce, pulse or finely chop cilantro, parsley, lime juice, onion, garlic, cumin, coriander, salt, and jalapeño. Gradually mix in olive oil.
5. Combine avocados, red onion, jalapeños, tomatoes, garlic, lime juice, and cilantro to make guacamole.
6. Prepare quick pickles by boiling vinegar, water, sugar, salt, and peppercorns, then pouring over your choice of veggies. Allow to cool.
7. Lightly grill or char corn tortillas. Keep them wrapped in a towel until ready to serve.
8. Assemble the tacos by layering sliced steak, chimichurri, guacamole, and quick pickles on the tortillas. Add additional toppings as desired.
