2 bay leaves
2.5 pounds boneless, skinless chicken breast or thighs, cut into 1 to 1.5-inch pieces

Instructions
1. Blend garlic, oregano, rosemary, paprika, salt, pepper, olive oil, white wine, and lemon juice to prepare the marinade.
2. Place chicken pieces in a large bowl, add bay leaves, and pour over the marinade. Toss to coat well, cover, and refrigerate for at least 2 hours or overnight. A 30-minute marination is acceptable if time-constrained.
3. Soak wooden skewers in water for about 30 to 45 minutes if using.
4. Thread the marinated chicken pieces onto skewers. Preheat a grill or griddle to medium-high heat and brush grates with oil.
5. Grill chicken skewers for about 5 minutes, rotating evenly until browned and ensure the chicken reaches an internal temperature of 165°F.
6. Briefly grill pita bread to warm.
7. To assemble, spread Tzatziki on warm pita, add grilled chicken pieces, and top with sliced tomatoes, cucumbers, onions, and olives.
