2 cups all-purpose flour

1/4 cup packed light brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 very ripe bananas, mashed (about 1 ½ cups)
1/2 cup Greek yogurt (plain or vanilla)
1/4 cup vegetable oil or melted butter
1/4 cup maple syrup or honey
2 large eggs
2 1/2 teaspoons vanilla extract
1 cup chocolate chips or chopped nuts
Instructions
1. Preheat the oven to 350°F. Line a 9-inch loaf pan with parchment paper, allowing excess to hang over the edges for easy removal, and grease with cooking spray.
2. In a large bowl, whisk together the flour, sugar, brown sugar, baking soda, and salt.
3. In a separate bowl, combine the mashed bananas, Greek yogurt, oil or butter, maple syrup or honey, eggs, and vanilla extract.
4. Gently fold the wet ingredients into the dry ingredients until just mixed. Carefully fold in the chocolate chips or nuts.
5. Pour the batter into the lined loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
6. Allow the bread to cool completely in the pan before lifting it out using the parchment paper handles for slicing.
